At the centre of the menu is the pinsa romana—a lighter, airier cousin to Neapolitan pizza, made with a slow-fermented mix of rice, soy, and wheat flours. Topped with classics like diavola, margherita, and mortadella with stracciatella, the pinsa is crisp-edged, cloud-soft, and deeply satisfying. Alongside, you’ll find rich house-made pastas like rigatoni amatriciana, cacio e pepe, and lasagna al forno, all deeply rooted in Roman tradition.
